GREENVILLE — Norwegian Sugar Cookies
1 cup of Butter, softened
1 cup Sugar
1 Egg, beaten
1 teaspoon Vanilla
2-1/2 cups Flour
Heat oven to 350 degrees.
Combine all ingredients, except flour, in a large bowl.
Beat at medium speed, scraping bowl often, until well mixed. (If dough is too soft, cover, refrigerate at least two hours until firm).
Press 2 to 3 teaspoons of dough evenly into individual cookies.
Bake for 8 to 11 minutes, until cookies are lightly browned.
Allow cookies to cool for 5 minutes before removing them from pan.
