Living a life of pie

New restaurant coming to Farmers market

GREENVILLE — Shannon and Robert Foltz plan to carve a slice of downtown Greenville business this spring, when they open the “Ain’t Just Pie” restaurant in the Farmers Market.

Robert was busy one recent afternoon, tearing out the old walls of the vacant building at northwest corner of Lee and Gordon Streets. Shannon owns and operates the original “Just Pie” location in West Tawakoni.

The business — which not only offers home made pies but also serves sandwiches, salads and more — has been a hit and Robert said they wanted to branch out. He explained they are also looking at locations in Quinlan and Rockwall.

“They will all be locally owned pie houses,” he said.

Just Pie is also offering a chance for customers to place orders on the restaurant’s web site and get to pick up their favorite pies at locations in Coppell, Frisco, McKinney, Rockwall and Dallas.

The Greenville restaurant will feature a full commercial kitchen.

“We’ll be serving breakfast and lunch and maybe dinner, we’ll see how things go,” Robert said.

The building in the Farmers Market will be expanded and there will also be an outdoor seating area.

“It will be about double the size it is now,” he said.

The restaurant is expected to be open this spring.

“We will be finished with the remodeling by the end of March,” Robert said.
